Ingredients

  • 1 bag Success® White Rice
  • 2 lbs shrimp, peeled & deveined
  • 3 tbsp olive oil
  • 2 tsp taco seasoning
  • 1 cup sour cream
  • 2 limes, zested and juiced
  • 1/2 cup fresh cilantro leaves
  • 4 avocados, cubed
  • 1/4 cup black beans
  • 1/4 cup corn
  • 1/4 store bought pico de gallo
  • Lime wedges (optional)

Instructions

    Step 1

    Prepare rice according to package directions.

    Step 2

    Toss shrimp with olive oil and taco seasoning. In a large skillet, sauté over medium-high heat for 3 minutes per side until pink and cooked through.

    Step 3

    Add sour cream, lime juice and zest, and cilantro to a blender. Blend until smooth.

    Step 4

    Divide rice into 4 bowls. Top each with shrimp, avocado, black beans, corn, and pico de gallo. Drizzle generously with cilantro lime crema. Garnish with lime wedges, if using, and extra cilantro.
